Cozy, Healthy Soup Recipe

 


It’s cozy season and I can’t think of a better way to beat the winter blues than with a warm soup which also lets you keep those New Year’s resolutions in check! I've got the perfect soup recipe for you! Not only is it delicious but it's also healthy, so you can indulge without the guilt.

Introducing: "The Soup That Will Warm Your Soul."

This hearty recipe is packed with nutrients and will keep you feeling full and satisfied all winter long. Plus, it's super easy to make…translation: you’ll be feeling like Top Chef in no time! 

Here's what you'll need:

  • 1 tablespoon olive oil

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 large sweet potato, peeled and diced

  • 2 cups vegetable broth

  • 1 can coconut milk

  • 1 cup frozen peas

  • 1 cup frozen corn

  • 1 cup cooked quinoa

  • 1 cup cooked black beans

  • 1 teaspoon chili powder

  • 1 teaspoon cumin

  • 1 teaspoon paprika

  • Salt and pepper to taste


Okay, now let's get cooking!


  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until the onion is translucent.

  2. Add the sweet potato and sauté for an additional 5 minutes.

  3. Pour in the vegetable broth and coconut milk and bring to a boil.

  4. Add the frozen peas and corn, along with the cooked quinoa, black beans, chili powder, cumin, paprika, and salt and pepper.

  5. Reduce the heat to low and simmer for 10-15 minutes, or until the sweet potato is tender.

  6. Serve hot and garnish with your favorite toppings. We recommend a sprinkle of cilantro and a dollop of Greek yogurt.

This soup is the ultimate comfort food. So go ahead, curl up with a bowl and a good movie (may I suggest "You've Got Mail"?) and enjoy!
