Ingredients:
2 c oat flour
1 c rolled oats
1/2c coconut sugar
3/4 c butter or coconut oil
1 tsp vanilla extract
4 c frozen tart cherries
A pinch of salt
1/2 c pure maple syrup
4 tbsp corntarch
Instructions:
1. Combine oat flour, rolled oats, coconut sugar, salt, chilled butter, and vanilla. Mix until it forms a dough like consistency. Divide mixutre in half.
2. In a saucepan, combine the frozen tart cherries, maple syrup, and cornstarch. Cook over medium heat, stirring constantly until the mixture thickens.
3. Press half of the crumble mixture firmly into the bottom of the pie dish to form a solid bash.
4. Pour the cherry filling over the crumble base in the pie dish, spreading it evenly.
5. Crumble the remaining half of the crumble mixture over the cherry filling, covering is completely.
6. Place the pie in a preheated over at 350 and bake for 35-40 minutes, or until the top is golden brown and the filling is bubbly.
7. Allow the pie to cool to make slicing easier. Serve and enjoy!
