An easy blueberry oatmeal bake comes together in 10 minutes and cooks for 20 minutes.
Bonus: you probably already have everything you need to make it in your pantry/fridge.
Optional: sub out the blueberries if you don’t have them for another berry or even chocolate chips.
Blueberry Oatmeal Bake
Ingredients
1 1/2 cups gluten free oats (we use Sprouted Rolled Oats from One Degree Organic Foods)
1/4 cup brown sugar
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon vanilla
1/2 teaspoon salt
1/2 cup milk (we use almond milk)
1 egg
2 bananas (I left these out)
1/4 cup peanut butter
1 cup fresh or frozen blueberries + more for the top if you want (I'll be experimenting with strawberries next)
Instructions
Preheat oven to 350.
Mix all the ingredients together and put into an 8x8 baking dish.
Bake for 20 minutes.
Remove from oven and let cool.
Enjoy by itself or slather more peanut butter on top.
