Grilled Bruschetta Chicken

Ingredients

  • 1.25 lb Chicken breasts, cut into tenderloins
  • 1 tbs Olive oil
  • 2 tbs Balsamic vinegar
  • 2 tbs Lemon juice
  • 1/2 tsp Oregano
  • 1 tbs Fresh basil, finely chopped
  • 1 tbs. Minced garlic
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Topping:

  • 4 medium Roma tomatoes, chopped
  • 2 cups Spinach, chopped and sautéed
  • 1/4 cup Fresh basil, finely chopped
  • 1 tbs Minced garlic
  • 1/2 tbs Olive oil
  • 3 tbs Balsamic vinegar
  • 1/4 tsp Salt
  • 1/4 tsp Pepper

Directions

  1. In a large bag, combine the olive oil, vinegar, lemon juice, garlic, and seasonings. Shake to combine well. Place the chicken in with the marinade, chill for 2-4 hours.
  2. While the chicken is marinating, combine all the ingredients for the topping in a small bowl, mix well. Refrigerate until ready to serve.
  3. Once the chicken is done marinating, grill chicken on medium heat till cooked through. Top with Bruschetta mixture and serve immediately. Enjoy!


Optional serve with pasta or rice.
