Ingredients
- 1.25 lb Chicken breasts, cut into tenderloins
- 1 tbs Olive oil
- 2 tbs Balsamic vinegar
- 2 tbs Lemon juice
- 1/2 tsp Oregano
- 1 tbs Fresh basil, finely chopped
- 1 tbs. Minced garlic
- 1/2 tsp Salt
- 1/4 tsp Pepper
Topping:
- 4 medium Roma tomatoes, chopped
- 2 cups Spinach, chopped and sautéed
- 1/4 cup Fresh basil, finely chopped
- 1 tbs Minced garlic
- 1/2 tbs Olive oil
- 3 tbs Balsamic vinegar
- 1/4 tsp Salt
- 1/4 tsp Pepper
Directions
- In a large bag, combine the olive oil, vinegar, lemon juice, garlic, and seasonings. Shake to combine well. Place the chicken in with the marinade, chill for 2-4 hours.
- While the chicken is marinating, combine all the ingredients for the topping in a small bowl, mix well. Refrigerate until ready to serve.
- Once the chicken is done marinating, grill chicken on medium heat till cooked through. Top with Bruschetta mixture and serve immediately. Enjoy!
Optional serve with pasta or rice.
