Cozy Italian Soup

 


No matter what part of the country you’re in, Yes, even if it’s still 90 degrees where you are! Nothing says “fall” like a warm and cozy soup. This favorite soup is easy to put together and throw in the crockpot while you’re working or doing something more fun like carving pumpkins! If you try it, I’d love to hear what you think! Ingredients:

● 1 1/2 lbs Italian sausage, sweet or spicy 

● 2 tsp Basil, dried 

● 2 tbsp Garlic 

● 2 cup Kale 

● 2 tsp Oregano, dried 

● 3, 28 ounce cans Tomatoes 

● 1 Yellow onion  

● 6 cups Chicken broth  

● 1 20 ounce package Cheese tortellini, refrigerated {I like the Taste Republic brand} 

● 1/2 tsp Black pepper 

● 2 tbsp Italian seasoning 

● 1 tsp Red pepper 

● 2 tsp Salt 

● 1 cup Heavy cream or half-n-half 

● 1 cup Parmesan cheese, grated 


Directions: 

1. In a large saucepan, add sausage, onion and garlic. Cook over medium-high head until sausage is cooked thoroughly. 

2. Remove sausage from hear and drain excess grease. 

3. In a crockpot, add chicken broth, crushed tomatoes, sausage, and all of the seasonings. 

4. Cook on high for 2-3 hours or low for 4-5 hours. 

5. Add heavy cream, shredded parmesan, and tortellini and cook for another 20 minutes. 

6. Add chopped kale and cook for another 10 minutes. 

7. Garnish with additional cheese if you want!
