Ingredients:
1 pound chicken - boneless, skinless cut into very thin strips1 ½ teaspoons cornstarch
1 tablespoon soy sauce, tamari (I used liquid aminos)
1 tablespoon sherry, dry
1 teaspoon garlic, minced
½ tablespoon vegetable oil
1 teaspoon ginger root ( I used powdered ginger)
½ cup carrots, strips
½ cup celery, sliced
1 package snow pea pods, frozen (I used fresh)
Sauce Ingredients:
½ cup chicken broth2 tablespoons soy sauce, tamari (I used liquid aminos)
1 tablespoon cornstarch
1 teaspoon sugar (I skipped this)
Optional Ingredients:
scallions, spring or green onions
1 can water chestnuts, sliced & drained

Desired rice or noodles
Instructions:
Mix the chicken, cornstarch, soy sauce and sherry in a small bowl. Set aside.
Heat 1 teaspoon of oil in skillet over medium to high heat.
Stir in the garlic and ginger, cook about 20 seconds until fragrant.
Add chicken and stir fry until cooked through. Remove and set aside.
Add the remaining oil, stir fry carrots and celery for about one minute. (Mine took longer to get soft)

Optional: Add the green onions and stir fry for about 30 seconds. Add the water chestnuts.
Add snow pea pods. Stir fry still snow pea pods are cooked. Turning a brilliant green shade.
While that's cooking mix up sauce ingredients.
Stir the sauce into the vegetables.

Cook, stirring until boiling.
Return chicken to pan and heat through.
Serve over desired rice or noodles.
