Gluten Free Chinese Chicken

Easy Gluten Free Chinese Cashew Chicken

Cook 1.5 pounds diced chicken in frying pan (I used 2 breasts) I seasoned with onion and garlic powder.

Before chicken is fully cooked add the following sauce to pan.

Sauce:

1/2 cup honey
1/4 cup tamari (gf soy sauce or liquid aminos)
2 Tbsp catsup

Mix these three ingredients in a small bowl.
Stir well.
Pour over bite size chicken, cook an additional 5 minutes to coat chicken well.

Make slurry of 3 Tbsp water & 2 tsp cornstarch.
Add to frying pan and stir until thickened.

Add cashews or nut of choice at this time.  Or before if you like them softer.

And we served it on top of rice ramen pictured here.

Another great option for quick meal times are these sticky rice bowls. I grabbed them at Costco.
