Spicy Cashew Chicken

Slow Cooker Spicy Cashew Chicken

Ingredients

  • lb boneless, skinless chicken breasts, cut into 1 inch pieces

  • 3 Tablespoons Cornstarch

  • 1/2 tsp black pepper

  • 1 Tbsp canola oil

  • 1/2 cup Bragg Liquid Aminos

  • 4 Tbsp sherry cooking wine

  • 4 Tbsp ketchup

  • 2 Tablespoons honey (or pure maple syrup)
  •
  • 2 tsp Frank's Red Hot Sauce

  • 2 Tbsp brown sugar

  • 1 tsp minced garlic

  • 1/4 tsp ground ginger

  • 1/4 tsp red pepper flakes

  • 1 cup cashews

Instructions

  1. Combine cornstarch and pepper in resealable food storage bag. Add chicken. Shake to coat with cornstarch mixture.

  1. Heat oil in skillet over medium-high heat. Brown chicken about 2 minutes on each side. Place chicken in slow cooker.

  1. Combine remaining ingredients except cashews in small bowl; pour over chicken. (If you like softer cashews add them during the cooking process, if you want more of a crunch, add them right before serving)

  2. Cook on LOW for 3 to 4 hours.

  3. Serve over rice or noodles. Makes 4-6 servings.

We use these noodles we grab at Costco.
