Ingredients
4 tbsp butter
1/2 to 1 c of fruit of choice {blueberries, strawberries, rhubarb, apple, or mix of such}
3/4 c flour
3/4 c milk or milk alternative
1/2 tsp salt
1/4 tsp baking powder
2 tbsp pure maple syrup
4 eggs
Optional: 2 tsp cinnamon
INSTRUCTIONS
Preheat oven to 400 F
Place butter into a cast iron frying pan and into the oven to melt butter.
In a bowl or blender combine the flour, baking powder, salt, milk, eggs, and maple syrup, mix to combine.
Fruit on the bottom of the hot pan on top of the melted butter. Sprinkle cinnamon over top if desired.
Pour mixture over fruit. Working quickly so that the pan remains hot.
Bake in oven for 25-35 minutes until golden brown.
