In a pinch BLACK BEAN DIP
INGREDIENTS
- 1 can Black Beans, drained
- 1 can Diced Tomatoes & Green Chilies, drained
- 1-2 tablespoons Olive Oil (based on how creamy you'd like the dip)
- 2 cloves garlic or 1 tsp minced garlic
- dash of cumin powder
- Salt, to taste
- Pepper, to taste
Optional Add Ins:
- ½ mango (½ cup chopped)
- ½ cup corn
- ½ cup chopped cilantro
- ¼ cup goat cheese
- 1 lime, juiced
INSTRUCTIONS
- In an immersion blender, combine the beans, diced tomatoes/chilies, olive oil, garlic, cumin powder, salt, and pepper. Blend until smooth.**Add optional ingriendts as desired.
- {Optional} Chop the mango and goat cheese into bite-sized pieces, combine with blended mixture along with the corn and chopped fresh cilantro.
- Serve right away {or chilled} with tortilla chips.
{You may also use a food processor to combine, but this recipe comes out more smoothly with an immersion blender!}
