In A Pinch Dip

In a pinch BLACK BEAN DIP

INGREDIENTS

  • 1 can Black Beans, drained
  • 1 can Diced Tomatoes & Green Chilies, drained
  • 1-2 tablespoons Olive Oil (based on how creamy you'd like the dip)
  • 2 cloves garlic or 1 tsp minced garlic
  • dash of cumin powder
  • Salt, to taste
  • Pepper, to taste


Optional Add Ins:
  • ½ mango (½ cup chopped)
  • ½ cup corn
  • ½ cup chopped cilantro
  • ¼ cup goat cheese
  • 1 lime, juiced

INSTRUCTIONS


  1. In an immersion blender, combine the beans, diced tomatoes/chilies, olive oil, garlic, cumin powder, salt, and pepper. Blend until smooth.**Add optional ingriendts as desired.
  2. {Optional} Chop the mango and goat cheese into bite-sized pieces, combine with blended mixture along with the corn and chopped fresh cilantro. 
  3. Serve right away {or chilled} with tortilla chips.
 {You may also use a food processor to combine, but this recipe comes out more smoothly with an immersion blender!}
