Copycat Qdoba Bowl

 


This is sure to become a family favorite at your house.  Casey has asked on several occasions if we could just eat it every day, lol. 

Feel free to get creative with your toppings, I simply listed the ones we use as that's how we would enjoy this dish at Qdoba.


The Chicken

Ingredients

  • 2 lbs boneless skinless chicken breasts pounded thin
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 2 tablespoons adobo sauce from a small can of Chipotle peppers
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon oregano or Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  • Combine chicken garlic, olive oil, adobo sauce and seasoning in a large bowl (or ziplock bag), cover with plastic wrap. Refrigerate for 30 minutes or up to 2 days.  {Definitely recommend overnight}
  • Preheat about 1 tablespoon oil in a large pan over medium-high heat. Add the chicken to the pan and cook, turning occasionally, until completely cooked through, about 6-7 minutes per side.  {Other option is to grill it, this is our preferred method and they grill it at Qdoba}
  • Remove the chicken on top large cutting board and allow to rest for at least 5-10 minutes then Slice or chop. Serve in a burrito, in a salad, or on its own!

TIP:  Love to cook extra ahead & freeze to make these an even easier weeknight meal.


The Bowl Ingredients

Sticky rice

Cilantro

Corn

Black Beans

Jalapeno

Salsa

Guacamole


Tip:  mix the corn, black beans, & jalapeno in a pan on the stove to heat up.  Add a dash of seasoning of choice if you prefer.


Optional:  Queso, Cheese

I list these as optional as they should be used sparingly.

PRO TIP: you must shred your own cheese!  Do not, I repeat do not buy the pre shredded cheese   Pre shredded cheese is coated & that coating is not idea for a creamy, melty delicious cheese dip! 



Creation

Grab a plate or large bowl to start layering.  Start with rice, mix in the cilantro, and then layer your desired toppings.  Enjoy!



Extra Tips:

If you are in need of a quick & easy rice this is my pick.  I even highlighted it in this past blog post.


By chance you need a delicious salsa which doesn't contain onions or garlic, here's my recommendation.  It's really hard to tell by the taste those 2 ingredients are missing.
