Rhubarb Drink

This was inspired by this recipe which I made during the summer of 2020.  However when you boil fruits or veggies then pour of any liquid you can lose some of the benefits so I tried this & love it!


Here's why I love rhubarb plus when cooked 20 min rhubarb shows a 167% increase in anti-cancerous polyphenols ~ eat that cancer cause I sure am, YUM!!!



Ingredients

  • 4 cups diced rhubarb
  • ½ cup water
  • ½ cup white sugar

I was cleaning out the freezer to make room for this years crop so this is what I mixed up. (3x the recipe, approx)

  • 12c rhubarb 
  • 1 1/2c water
  • 1 c sugar 

Optional Ingredients:
    Tequila
    Simple Syrup
    Lime Juice
    Triple Sec

How To


Step 1

Place the rhubarb into a saucepan, and pour in the water. Cover, and bring to a simmer over medium heat. Reduce heat to medium-low, and continue simmering until the rhubarb breaks down and releases its juices, about 15-20 minutes. 


Step 2

Use an immersion blender or place into a blender to create a puree.  No pulp or fibers should remain.

Step 3

Stir the sugar into the hot/warm juice. 


Step 4

Refrigerate the syrup until very cold, at least 2 hours.

Step 5

Use in smoothies, margaritas, or other fruit blend juices.


Optional Margarita Recipe

To prepare the margaritas, place the ice into a blender, then pour in the tequila and rhubarb syrup. Blend until smooth, or until pureed to your desired consistency. Pour into chilled margarita glasses to serve.
