What the Heck is an Ebelskiver? (aka Aebelskiver)
This recipe makes 14 Ebelskivers.
Ingredients:
2c confectioners' sugar
1 1/4c all purpose flour (I used The Pancake Mix)
3/4tsp backing powder
1/4tsp salt
2tbsp granulated sugar
2 large eggs, seperated
3/4 c milk
1/4c unsalted butter, melted
1 1/2tsp vanilla extract
extra unsalted butter, melted
How to:
1. In a large bowl, whisk together flour, baking powder, and salt.
2. In a medium bowl, whisk together granulated sugar, egg yolks, milk, 1/4 cup butter, and vanilla until well blended.
3. Add the egg yolk mixture to the flour mixture and stir until just blended (the batter will appear slightly lumpy). TIP: Allowing the batter to sit for several minutes adds fluffiness when baked.
4. In a medium bowl, using an electric mixer on medium speed, beat egg whites until frothy. Increase speed to high and beat until stiff, but not dry, peaks form. Using a rubber spatula, gently mix one third of the egg whites into the batter. Gently fold in the remaining whites.
5. Brush wells of pan lightly with butter. Set pan over medium heat. When oil begins to sizzle, add 2 tbsp batter to each well. Cook for 2 to 4 minutes or until bottoms are golden brown. Using two skewers, flip the puffs over. Cook for 2 to 3 minutes or until bottoms are golden brown and a toothpick inserted in the center comes out with a few moist crumbs attached.
6. Sift confectioners' sugar into a medium bowl and set aside.
7. Remove pan from heat & transfer puffs to the bowl of confectioners' sugar, turning to coat. Transfer to a plate. Let pan cool slightly.
8. Repeat steps 6 & 7 with the remaining batter and confectioners' sugar, brushing wells with butter and reheating pan before each batch. Serve warm.
